We have hit close to those notes this selection but gone a hint brighter and creamer. A choice we were happy to make. We would recommend this coffee for any brewing technique from espresso to pourover - we enjoy using this El Salvadorian coffee as espresso or filter coffee in our shops. \u003c\/p\u003e\n\u003cp\u003eFelicita Ditamar is an experienced farmer from El Tunel village in La Palma town.\u003cbr\u003eTwenty-seven years ago, she started working with coffee thanks to a program\u003cbr\u003efunded by the government to develop the area and promote coffee cultivation. She\u003cbr\u003estarted with only 500 coffee seedlings planted at her father’s farm, a property that\u003cbr\u003eshe later inherited. Three years later, when the plants were fully productive, she\u003cbr\u003erealized it was an opportunity to grow more coee and to have an income. She saw\u003cbr\u003eprogress in coffee; that is why her farm is named “El Progreso” to honor the growth\u003cbr\u003eopportunities and the chance to become an independent woman.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eFor Felicita, being a farmer has not been an easy path, but she has found strength\u003cbr\u003eand support in her family. Today, all her daughters and sons-in-law help manage and\u003cbr\u003eharvest the farm. Ten years ago, she started working with specialty coffee to\u003cbr\u003eimprove farm management practices and quality. Nowadays, 75% of her total\u003cbr\u003eproduction is sold as specialty coffee. In the future, she plans to slowly improve\u003cbr\u003edrying infrastructure and plant more Pacamara trees to increase production. She\u003cbr\u003eshares that what motivates her to continue working in specialty coffees is to access\u003cbr\u003ebetter prices and knowing roasters are happy with her coffee.
